I prefer cupcakes over pie, with one exception. Lemon Meringue Pie. Specifically, from scratch lemon meringue made by my great-grandmother, Mary, called Diddy. She made a lot of pies in her day, countless, for friends and families, for holidays and for everyday. But whenever I was asked about pie, it wasn't chocolate, butterscotch, pumpkin, rhubarb, apple.... Nope, it was the lemon. Always.
I remember coming home from college each time to a phone call that my pie was ready. To be honest, I haven't had a slice of anyone else's lemon pie. Ever. My great-grandmother passed in February of 2012, and I miss her often. And then, on Christmas Day, I smiled, thinking of her. My husband got me an ice cream maker as a gift, and the first thing I made was lemon frozen yogurt. It was delicious, but also for me, each spoonful tasted of her lemon meringue pie.
I had never knowingly had lemon curd before, and it was one of the ingredients. Delicious! And full of memories.
Recipe:
Mix 2cups plain 2% Greek yogurt with 3/4 cups lemon curd. You can use store bought (I used Dickinson's) lemon curd. I plan on making my own soon! Pour the mixture into your prepared ice cream maker, churn for about 20 minutes. Ridiculously easy and amazingly tasty! If you're not a fan of Greek yogurt, you can use plain or vanilla yogurt. You need some fat, 2% if not whole yogurt for it to be creamy when frozen.
